Ingredients
- 2 eggs
- 1 1/2 dl. buttermilk
- 1 tsp. vanilla sugar
- 1 1/2 dl. coarse rolled oats
- 1 dl. almond flour
- 1 tsp. baking powder
- 1 tbsp. melted butter
- 125 g fresh blueberries
- Butter for frying
- 3 tbsp. Jakobsens Topping with vanilla
- 2 tbsp. coconut flour
- Berries or fruit, e.g. pineapple cherry, raspberry or diced apple.
Preparation
1. Divide the eggs into whites and yolks and beat the whites until stiff.
2. Beat the plums with the buttermilk and vanilla sugar.
3. Stir the oatmeal, almond flour and baking powder into the egg yolks along with the melted butter.
4. Gently fold in the beaten egg whites and finally add the fresh blueberries.
5. Make small pancakes from the batter and serve with a vanilla, coconut flour and fruit topping.
