Caramelized pineapple with coconut cream

1. Cut the outside of the pineapple and then cut it into slices. Remove the centre with a knife.

2. Put a large frying pan over a medium heat, add the butter and let it brown.

3. Add the pineapple slices and fry for 2 minutes on each side.

4. Add honey to the pan and let it caramelize for 1-2 minutes.

5. Remove the fat from the coconut milk and discard the coconut water at the bottom - use it for something else.

6. Whip the fat part of the coconut milk with an electric whisk to a delicious coconut cream.

7. Arrange pineapple with coconut cream and sprinkle with toasted coconut flakes on top.

8. Garnish with fresh mint leaves.
