Cinnamon star bread with honey glaze

Ingredients

Preparation

Dish:

1. Dissolve honey in melted butter and milk. Allow to cool to approx. 35 degrees.

2. Similarly, dissolve yeast in lukewarm water and milk in a mixer bowl (make sure it does not exceed 35C degrees).

3. Add the yolks, flour and salt and start kneading.

4. Increase the speed to medium and knead for 5-7 minutes or until the dough is completely smooth. (Alternatively, you can use your hands to knead the dough)

5. Take a clean bowl and brush it with rapeseed oil.

6. Place the dough in the bowl and brush it lightly with oil. Make sure the dough is covered with oil all around.

7. Cover the dough with plastic wrap and let it rise in a warm place for about 1.5-2 hours. After 90 minutes, the dough will have more than doubled in size.

8. Mix cinnamon and sugar. Set aside.

9. Remove the dough from the bowl and punch it down. Let it rest for 5 minutes.

10. Now divide the dough into four balls. Roll them out into circles.

11. Spread the soft butter on one of the circles. Now sprinkle some of the cinnamon-sugar mixture over the first circle, place another one on top and repeat the procedure (no butter or cinnamon-sugar on the last circle).

12. Trim the edges to form a roughly round circle.

13. Place a glass (or honey lid) in the center. Divide the dough into 16 equal parts by cutting from the edge of the jar/lid and grabbing two strips of dough, twist them and lightly press the ends together.

14. Let the star bread rise for about 45 minutes.

15. Preheat the oven to 175C degrees.

16. Bake the bread for about 20 minutes or until nicely golden brown.

Glaze:

Whisk all the ingredients together and pour over the still warm star bread!
