Ingredients
- Surdej:
- 800 g water
- 400 g wheat flour
- 200 g wholemeal flour
- 50 g Jakobsens Danish Flower Honey
- Dish:
- 400 g sourdough
- 600 g water
- 200 g wholemeal flour
- 700 g wheat flour
- 50 g Jakobsens Danish Flower Honey
- 5 g yeast
- 2 tsp. salt
Preparation
The sourdough is made four days before baking.
Here's how:
1. Mix all the ingredients for the sourdough and leave the dough out on the kitchen table for a few days until the dough bubbles and smells fermented.
2. The dough is then put in the fridge.
After three days.
Here's how:
1. Mix all ingredients together except salt.
2. Put the dough in a mixer and mix the dough at slow speed for 5 minutes.
3. Stir at high speed for 5 minutes, adding salt in the last minute.
4. Put the dough in a container with a lid and leave it on the kitchen table overnight.
On the fourth day.
Here's how:
Preheat the oven to 35 degrees and let the dough rise for 30 minutes. in the oven for 30 minutes.
1. Turn the dough out onto a table with a little flour.
2. Then cut the bread into desired sizes and place them on a baking tray (do not roll the bread into balls).
3. Remove the loaves and preheat the oven to 240 degrees.
4. Bake the loaves for about 10 minutes. - or until golden.
5. Remove the loaves and leave to cool on a wire rack.
