American pancakes with acacia honey

1. Start by dividing the eggs into whites and yolks, and put them in separate bowls.

2. Beat the egg yolks with the sifted flour, baking powder and milk until you have a smooth dough.

3. Beat the egg whites and salt until white and fluffy. Gently fold in the beaten egg whites.

4. Heat a frying pan to medium temperature and add a little fat.

5. Spread about 1 dl of batter on the pan and let the pancake rise a little. When it takes colour, prick some blueberries into the batter and then flip. Then finish the pancake on the other side.

Serve the pancakes with honey/agave syrup and extra blueberries.

Heat the oven to 150 degrees and place a dish inside. Then you can keep the finished pancakes in there while you finish baking the last pancakes.
