Ingredients
- Spinach waffles:
- 2 bananas
- 4 eggs
- 2 tbsp. Jakobsens Danish liquid honey
- 100 g fresh spinach
- 2 dl Jakobsens coarse rolled oatmeal
- 1 tsp. baking powder
- A little fat, e.g. coconut oil or butter for the waffle iron
- Topping:
- 100 g mixed nuts and seeds, e.g. walnuts, almonds and pumpkin seeds
- 2 tbsp. Jakobsens Danish liquid honey
- Greek yoghurt or skyr
- Fresh fruit
Preparation
1. Blend banana with egg, liquid honey, spinach, oatmeal and baking powder.
2. Bake the waffles on a hot waffle iron, brushed with a little fat.
3. Toast the nuts and seeds in a dry frying pan and pour over the liquid honey.
4. Simmer for about 5 minutes.
5. Serve with Greek yoghurt or skyr and fresh fruit
