Sweet spinach waffles with honey-roasted nut crunch and fresh fruit

Ingredients

  • Spinach waffles:
  • 2 bananas
  • 4 eggs
  • 2 tbsp. Jakobsens Danish liquid honey
  • 100 g fresh spinach
  • 2 dl Jakobsens coarse rolled oatmeal
  • 1 tsp. baking powder
  • A little fat, e.g. coconut oil or butter for the waffle iron
  • Topping:
  • 100 g mixed nuts and seeds, e.g. walnuts, almonds and pumpkin seeds
  • 2 tbsp. Jakobsens Danish liquid honey
  • Greek yoghurt or skyr
  • Fresh fruit

Preparation

1. Blend banana with egg, liquid honey, spinach, oatmeal and baking powder.

2. Bake the waffles on a hot waffle iron, brushed with a little fat.

3. Toast the nuts and seeds in a dry frying pan and pour over the liquid honey.

4. Simmer for about 5 minutes.

5. Serve with Greek yoghurt or skyr and fresh fruit
