Oatmeal muffins

Ingredients

  • 50 g soft butter
  • 3/4 dl natural yoghurt
  • 60 g Danish Heather Honey
  • 2 eggs
  • 100 g Jakobsens Coarse Rolled Oatmeal
  • 50 g wheat flour
  • 1 pinch of salt
  • 1 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 40 g finely chopped walnuts
  • 200 g pear, coarsely grated
  • 1 pear, thinly sliced

Preparation

1. Beat butter, yoghurt and honey well together. Then beat in the eggs.

2. In another bowl, mix together the oats, flour, cinnamon, salt, finely chopped walnuts and baking powder.

3. Stir the flour and honey/yoghurt mixtures together. Stir in the grated pear and then pour the batter into muffin tins. Fill up to ¾ of the tin. Place two slices of pear in each tin.

Bake in a preheated oven at 175 degrees for 15-18 minutes. When they are ready, remove them from the moulds and cool on a wire rack.
