Gluten-free oat crispbread

Ingredients

  • 1 1/2 dl. flaxseed
  • 1 1/2 dl. sunflower seeds
  • 1/2 dl. chia seeds
  • 2 dl. water
  • 2 tbsp. neutral oil
  • 1 tsp. salt
  • 1 dl. Jakobsens gluten-free oatmeal, coarsely rolled
  • 3 dl. Jakobsens gluten-free oatmeal, coarsely rolled, ground into flour

Preparation

1. Mix flaxseed, sunflower seed and chia seed with water and oil and leave to infuse for about 10 minutes.

2. Add oatmeal and ground oatmeal. Mix the dough well and divide it into 2 pieces.

3. Place each piece between 2 pieces of baking paper and press the dough out or roll with a rolling pin.

4. Cut the dough into squares with a sharp knife or a pizza wheel.

5. Bake the crispbreads in the oven for about 50 minutes at 150°C and allow to cool before serving.

6. Store in an airtight container such as a biscuit tin or glass container with a lid.
