Ingredients

  • Bunde:
  • 6 egg yolks
  • 6 egg whites
  • 150 g sugar
  • 350 g Jakobsens Dansk Blomster Honey
  • 1 tsp. ginger powder
  • 1 tsp. clove powder
  • 2 tsp. cinnamon powder
  • 1 tsp. cardamom powder
  • 350 g wheat flour
  • 28 g baking soda
  • Lubricating cream:
  • 200 g soft butter
  • 200 g icing sugar
  • Milk and milk
  • 0.5 pcs. orange peel
  • For cake building:
  • 200 g chocolate
  • Decorate as desired

Preparation

Bunde:

1. Melt the honey in a saucepan until it liquefies and leave until lukewarm.

2. Whisk the egg yolks with the sugar until you obtain a white cream.

3. Whisk in the honey little by little.

4. Mix the flour with the spices and baking powder and sift it into the honey dough while stirring.

5. Beat the egg whites until stiff and then fold them into the batter.

6. Spread the dough in a suitable baking tray or springform pan with baking paper. Remember that it will rise quite a bit, about 1.5 cm thick is suitable.

7. Bake for approx. 40 min at 160°c fan oven.

Buttercream: 

1. Beat the butter with the finely grated orange zest until fluffy.

2. Whisk in the icing sugar little by little.

3. Whisk in a little milk if you want a smoother cream.

Cake building: 

1. When the cake is cold, divide it in half so that there is one top and one bottom.

2. Spread the buttercream on the base and place the top on top.

3. Temper the chocolate (melt ¾ of the chocolate in a water bath, remove from heat and add the remaining ¼ and stir until melted)

4. Spread chocolate over the cake.

5. While the chocolate is still wet, sprinkle with any garnishes.

6. Refrigerate until the chocolate has set.

7. Cut out the cake.
