About the raw material

Acacia is a very large plant that can grow up to 6-8 metres tall. The acacia tree often has a bushy appearance. The flowers are arranged in round or elongated heads with many stamens. The leaves are usually double-fined and feather-like.

Acacia trees flower in early spring, when the fragrant flower spikes attract bees with a large amount of nectar. Typically found in Eastern Europe along the Danube River, acacia trees flower for only about 14 days. If it rains, the bees won't fly, just as frost will cause the flowers to fall to the ground. The production of acacia honey is therefore very dependent on the weather conditions in May.

Acacia honey is almost always liquid due to its high fruit sugar content. It is one of the most popular types of honey, being very mild, and thus suitable as a sweetener.
