Granola muffins with honey cream

  • Granola muffins:
  • 3 dl Jakobsens coarse rolled oatmeal
  • ½ dl chia seeds
  • 1 dl coconut flour
  • 1 dl coconut oil
  • ¾ dl Jakobsens Danish liquid honey
  • 1 egg
  • Honey cream:
  • 2 tbsp. Jakobsens Danish liquid honey
  • 2 dl skyr or Greek yoghurt
  • Topping:
  • Fruit e.g. kiwi, orange and apple


1. Grease the muffin tins with a little coconut oil.

2. Heat honey in a small saucepan or microwave until soft.

3. Mix the oatmeal well with the chia seeds, coconut flour, coconut oil, liquid honey and eggs.

4. Put the mixture into paper muffin tins and press it well on the bottom and sides to form small bowls.

5. Bake at 125 degrees for about 15 minutes and let the dishes cool

6. Stir the liquid honey into the skyr or Greek yoghurt and add the cream to the muffin cups.

7. Garnish with fresh fruit and serve.
