Ingredients
- Muffins:

175 g Jakobsens Danish flower honey
- 2 eggs
- 2 dl. Greek yoghurt
- ½ dl. coconut oil
- 2 large carrots
- 175 g wheat flour
- 50 g Jakobsens coarse rolled oatmeal
- 2 tsp. baking powder
- 2 tsp. ground cinnamon
- Frosting:
- 200 g cream cheese
- 2 tsp. finely grated lemon zest

2 tbsp. Jakobsens Danish flower honey
- Garnish:
- Walnuts
- Lemon peel
Preparation
1. Whisk honey with eggs, Greek yogurt and coconut oil.
2. Grate the carrots coarsely and mix them into the dough.
3. Mix the wheat flour, oatmeal, baking powder and ground cinnamon and fold into the dough.
4. Divide the batter into 10 muffin tins.
5. Bake the muffins for about 30 minutes at 175°C and leave to cool.
6. Whip the cream cheese with the lemon zest and honey and spread the frosting on the cooled carrot muffins.
