Honey glazed duck breast

Preparation

1. Score the duck breasts crosswise on the fat side. Be careful not to cut into the meat.

2. Place the duck breasts in a very hot pan, fat side down.

3. Fry for about 3-4 minutes on the fat side, turn the duck breasts and fry on the other side for a few minutes.

4. Season with salt and pepper.

5. Place the duck breasts in a baking dish. Pour the fat from the pan over the duck breasts.

6. Boil the pan with sherry vinegar and pour the boiled mixture into the pan.

7. Then roast the duck breasts in the oven for 6-8 minutes at 225 degrees.

8. Take them out and brush with liquid honey and finish by giving the duck breasts a few minutes under the grill until golden.

Leave the duck breasts to marinate for 5 minutes before slicing and serving with the sherry cloud.
