Brown cookies - long-rolled

Ingredients

  • 250 g Jakobsens Everyday Honey
  • 1 tsp. cinnamon
  • 1 tsp. ground cloves
  • 1 tsp. ground ginger
  • 1 egg yolk
  • 2 tsp. potash (can be replaced by baking soda, but will be less crunchy)
  • 1½ tsp. deer salt
  • 250 g flour
  • Glaze:
  • 4 dl icing sugar
  • 1 egg white

Preparation

1. Pour the honey into a saucepan and melt it over low heat. Stir in the cinnamon, ginger and cloves.

2. Stir the potash into the egg yolk, which is then stirred into the honey. Add the flour and deer salt and knead the dough thoroughly. Store the dough in the fridge for the next day.

3. Roll out the dough on a floured board. Cut or press it into hearts or other shapes.

4. Bake the cakes at 175 degrees for 5-10 minutes, depending on size. Leave to cool on a baking tray before decorating.

Glaze:
Mix the icing sugar and egg white thoroughly.
