Brownie with honey foam and berries

Brownie

1. Start by turning on the oven to 175 degrees.

2. Melt the dark chocolate and butter in a bowl over a bain-marie or in the microwave.

3. Pour in the honey and stir well. Add one egg at a time while whisking.

4. Stir in the cocoa powder, wheat flour and salt. Line a springform pan (20 cm) with baking paper on the bottom and a little butter on the sides.

5. Pour in the batter and bake the brownie base for about 25 minutes. Allow to cool.

Honey foam

1. Pour honey into a saucepan and heat until it bubbles - about 110 degrees.

2. While the honey is heating, whip the egg whites until stiff.

3. Then pour the hot honey into the egg whites while whisking.

4. Whisk until cold. It takes about 10-12 minutes.

Address

1. Spread the honey foam on top of the brownie base.

2. Cut the berries into pieces and place them randomly on top of the honey foam.

Decorate with a little edible gold.
