Cabbage salad with mustard and apple

Ingredients

  • Salad:
  • ½ pointed cabbage
  • ½ purple pointed cabbage
  • 4 dl pearl barley
  • 2 red apples
  • 1 dl roasted hazelnuts, coarsely chopped
  • Dressing:
  • 25 g Jakobsens Acacia Honey
  • 50 g mustard, preferably coarse-grained
  • 10 g olive oil
  • 10 g apple cider vinegar
  • 20 g apple juice (can be omitted)
  • Salt and freshly ground pepper

Preparation

1. Cook the pearl barley according to the package instructions. Then leave to cool.

2. Finely chop the pointed cabbage.

3. Remove the cores from the apples and cut them into small cubes. Mix them with the pointed cabbage, pearl barley and toasted hazelnuts.

4.Make the dressing by mixing all the ingredients together. Season with salt and freshly ground pepper.

5. Toss the dressing with the salad and arrange on a platter.
