Baked root vegetables with mustard, thyme and honey

Ingredients

  • 1,5 kg mixed root vegetables
  • 4 tbsp. Jakobsens Everyday Honey
  • 1 dl dijon mustard
  • 4 tbsp. olive oil
  • 1 tsp. dried thyme (or ½ handful finely chopped fresh thyme)
  • Coarse salt and freshly ground pepper

Preparation

1. Turn on the oven to 175 degrees convection. Peel the root vegetables and cut them into sticks.

2. Mix oil with mustard, honey and spices. Toss the root vegetables in the mustard dressing.

3. Bake the root vegetables for 30-45 minutes in the oven. Turn them a few times along the way.

The root vegetables are ready when they are crisp and still have a little "bite".
