Salad with baked sweet potato, kale and spelt

Preparation

1. Boil the pearl barley according to the package instructions.

2. Cut the sweet potato into smaller pieces and season with salt, pepper and a little olive oil. Bake the potatoes in the oven for about 25 minutes until tender.

3. Rinse the kale and grate it into smaller pieces. Fry the pieces for about 1-2 minutes. in a very hot frying pan in a little oil - the cabbage should be a little "burnt" at the edges.

4. Mix the chopped rosemary, honey and vinegar together and season with salt and pepper. You can always adjust it with a little honey or vinegar if you want it sweeter or more acidic.

5. Mix everything together and serve.
