Galette with goat cheese and honey

Ingredients

  • Covenant:
  • 110 g soft butter
  • 135 g wheat flour
  • 100 g wholemeal flour
  • ½ dl water
  • 1 tsp. salt
  • Filling:
  • ½ squash
  • 1 onion
  • 2 stems thyme
  • 2 stalks rosemary
  • 1 tbsp. oil
  • 2 handfuls of spinach
  • 100 g goat cheese
  • Salt and freshly ground pepper
  • Topping:
  • 50 g Jakobsens Everyday Honey
  • 30 g pine nuts

Preparation

1. Put the butter, wheat flour, wholemeal wheat flour, water and salt in a food processor or knead them together by hand. The dough should just come together, but should be cohesive and smooth to work with, so that it can be rolled out.

2. Put it in the fridge for 45 minutes.

3. Cut the courgette and onion into smaller cubes.

4. Finely chop the thyme and rosemary.

5. Fry in a little oil in a hot pan for 5 minutes.

6. Add the spinach and let it come together.

7. Season with salt and pepper.

8. Take it off the pan.

9. Roll out the dough into a circle with a diameter of about 20 cm and place the fried filling in the middle.

10. Top with goat cheese.

11. Fold the edges up around the filling so that it does not run out.

12. Bake the pie in a preheated oven at 180 degrees for about 25-30 minutes.

13. After 10 minutes, remove the galette and sprinkle with pine nuts. Bake until done.
