Fresh pasta with chicken and honey/basil pesto

Ingredients

  • 2 pots fresh basil
  • 50 g roasted pine nuts
  • 1½ dl olive oil
  • 3 dl cream
  • 3 cloves garlic, finely chopped
  • 4 tbsp. Jakobsens Organic Acacia Honey
  • 2 dl chicken stock
  • Juice of ½ lemon
  • 50 g freshly grated Parmesan
  • Pepper
  • 500 g chicken
  • 500 g fresh pasta

Preparation

1. Pick the basil leaves and place them in a bowl with the pine nuts, olive oil, garlic, honey and Parmesan.

2. Beat the ingredients together with a hand blender until it has a uniform consistency. Mix with the cream and stock.

3. Heat the sauce and simmer for about 20 minutes. Season with lemon juice while the pasta is cooking and the chicken is roasting.

Serve with freshly grated Parmesan and basil and a little freshly ground pepper.
