Shrimp skewers with honey/lemon marinade

Preparation

Shrimp skewers:

1. Place the wooden skewers in water.

2. Rinse the lemon and peel the ginger.

3. Grate the ginger and lemon zest into a bowl with the oil, honey and lemon juice. Whisk it well together.

4. Turn the shrimp in the honey/lemon marinade and leave for at least 30 minutes.

5. Rinse and cut the spring onions into 3 cm bite-sized pieces.

6. Cut off the bottom of the pineapple and save it. Cut the pineapple into 4×4 cm pieces.

7. Place the prawns on skewers with the spring onions and pineapple.

8. Grill the shrimp skewers until the shrimp are cooked through.

Salad:

1. Rinse the lettuce and chop it.

2. Squeeze the juice from the bottom of the pineapple into a small bowl.

3. Mix 2 tbsp. pineapple juice with honey, oil and salt.

4. Toss the edamame beans with the lettuce and cashews and spread the pineapple/honey dressing over the salad.

5. Place the salad on the plate and arrange the prawn skewers on top. Finish with a sprinkle of parsley.

Tip:

The honey marinade is also suitable for chicken and fish.
