Ingredients
- 4 medium yellow beets
- 0,5 bunch tarragon
- 120 g feta
- Balsamic ice cream:
- 1,5 dl balsamic vinegar
- 1 dl Jakobsens Organic Flower Honey
Preparation
1. Clean the yellow beets and bake them whole for 1 hour and 15 minutes. at 150° convection oven.
2. Let them cool.
Balsamic ice cream
1. Balsamic vinegar and honey must be reduced in a saucepan to a syrup-like consistency. Takes about 20-30 minutes over medium heat.
2. Break yellow beets into pieces, arrange them on a plate and crumble with feta. Top with balsamic glaze and tarragon.
