Chicken with a Honey-Thyme-Garlic Marinade

Ingredients

  • Marinated chicken breast: 
  • 4 chicken breast fillets
  • 3 tbsp. Jakobsens Strejf with garlic and thyme
  • 2 tbsp. olive oil
  • 1 tbsp. lemon juice
  • Salt and pepper
  • Oven-baked potatoes: 
  • 800 g small potatoes
  • 1–2 tbsp. olive oil
  • Salt and pepper
  • Fresh parsley
  • Green salad: 
  • Crispy Salad
  • 2 tomatoes
  • 1 avocado
  • Sunflower seeds
  • Olive oil
  • Lemon juice

Preparation

Marinated chicken breast: 

  1. Mix together the Strejf marinade with garlic and thyme, oil , and lemon juice.
  2. Toss the chicken in the marinade and let it marinate for at least 30 minutes (or overnight).
  3. Fry or grill them for 5–6 minutes on each side, brushing them with additional marinade as you go.

Oven-baked potatoes: 

  1. Preheat the oven to 200 °C (convection).
  2. Toss the potatoes with olive oil, salt, and pepper, and spread them out on a baking sheet.
  3. Bake them for about 30–35 minutes, until they are golden brown and tender.
  4. Turn them over as needed while cooking. Sprinkle with fresh parsley when serving.

Green salad: 

  1. Dice the tomatoes and avocado.
  2. Toss them with the salad.
  3. Add sunflower seeds and season lightly with oil and lemon juice.
