Buckwheat porridge with caramelised apples and peanut butter

Ingredients

  • Porridge:
  • 3 dl whole buckwheat
  • 4 ½ dl boiling water
  • 2,5 dl coconut milk
  • 2 tbsp. Jakobsens Acacia Honey
  • 1 pinch of salt
  • Caramelised apples:
  • 2 apples
  • 25 g butter
  • 70 g sugar
  • ½ dl water
  • Topping:
  • Coconut chips
  • 4 tbsp. Peanut butter

Preparation

Porridge
1. Rinse the buckwheat well and put it in a pan of boiling water. Let it simmer under a lid for about 20 minutes.

2. Add the coconut milk, acacia honey and a pinch of salt to the stock and cook for a further 7-10 minutes on a low heat - or until it is smooth and has the consistency you want.

Caramelised apples
3. Remove the core from the apples and cut them into halves.

4. Melt sugar to a golden caramel over medium heat.

5. Add butter and let it brown.

6. Add water to the pan and let the caramel collect.

7. Add the apples and let the caramel cook around the apples for about 2-3 minutes, until they are slightly tender.

Arrange the porridge in bowls topped with caramelised apples, peanut butter and a little toasted coconut.
