Refrigerator buns with fat cream and spiced honey

  • Refrigerator buns:
  • 5 dl cold water
  • 20 g yeast
  • 1 tsp. salt
  • 1 large tbsp. Jakobsens Danish liquid honey
  • 2 dl Jakobsens coarse rolled oatmeal
  • 1 dl durum flour
  • 4-5 dl wheat flour
  • Fat cream:
  • 250 g fresh feta in a block (preferably the soft variety in a carton)
  • 1 dl Jakobsens Danish Liquid Honey
  • 1 tbsp. olive oil
  • 1 clove of garlic
  • 1 tsp. chili flakes
  • 1 tsp. grated lemon peel
  • 2-3 tbsp. fresh mint


Refrigerator buns:

1. Dissolve yeast in cold water and add salt and honey.

2. Stir in the oatmeal and then the durum flour.

3. Then stir in most of the wheat flour, saving a little and adding as you mix the dough together. The dough should not be kneaded, and it is quite sticky but cohesive when you stir it.

4. Cover the bowl. For example, with a pot lid and put it in a cold place for 1-2 days.

5. Remove the bowl from the oven about 10 minutes before you want to use it.

6. Put the dough on a baking tray with two spoons, there will be 12- 15 buns.

7. Turn on the oven to 225 degrees and let the buns rise while the oven heats up.

8. Place the buns in the oven when hot and bake for 15-20 minutes until crispy.

TIP: The buns can also be baked in advance and frozen, they are still delicious when thawed in the oven before serving.

Feta cream and spiced honey:

1. Cut the feta into small pieces and mix with the sour cream.

2. Pour the cream into a bowl and chill until serving.

3. Heat honey with oil in a small saucepan.

4. Chop the garlic very finely and add it to the honey together with the chilli flakes and lemon juice.

5. Let the mixture boil and then turn off the heat.

6. Allow the honey to cool and drizzle over the fat cream just before serving.

7. Garnish with fresh mint.

8. Serve the fat cream with spiced honey with freshly baked rolls.
