Ingredients
- Covenant:
- 200 g chamber junkers
- 1 lime, organic
- 100 g butter

2 tsp. Jakobsens Danish Flower Honey
- Filling:
- 5 gelatine leaves
- 1 dl whole milk

4 tbsp. Jakobsens Danish Flower Honey
- 5 dl buttermilk
- 2 limes, organic
- 200 g mascarpone cheese
- 30 g icing sugar
- Garnish:
- 200 g mixed berries e.g. strawberries, blueberries, raspberries, blackberries, currants
- 2-3 sprigs of mint

Preparation
Covenant:
1. Crush the kammerjuns in a mini chopper. Grate the zest of one lime into the crushed kammerjuns.
2. Melt the butter on low heat and add the honey. Stir the honey and butter together well.
3. Pour the butter and honey mixture over the crushed ladyfingers and mix well.
4. Line the bottom of a 22 cm diameter springform pan with baking paper and spread the mixture in it. Press it well together and refrigerate.
Filling:
1. Soak the gelatine in cold water.
2. Heat the whole milk while stirring and add honey.
3. Remove the water from the gelatine and stir it into the warm milk.
4. Stir in the buttermilk and grate the zest of the two limes into the milk mixture.
5. In a bowl, whisk together the icing sugar and the juice from the two limes. Stir in the mascarpone.
6. Fold the mascarpone mixture with the milk leaves.
7. Spread the filling on top of the cooled kammerjunke base. Refrigerate the cheesecake for at least 4 hours.
Garnish:
1. Arrange the mixed berries.
2. Spread the berries on top of the cheesecake and garnish with mint leaves. Top the cheesecake with liquid honey just before serving.
