Leg of lamb with honey dressing

1. Turn on the oven at 175 degrees. Place a piece of baking paper on a baking tray. Place the rack of lamb on the baking sheet, fat side up. Cut the fat side.

2. Mix red wine vinegar, 0.25 dl honey, olive oil, salt and pepper. Pour the mixture over the leg of lamb.

3. Wash the orange and peel it with a potato peeler. Coarsely chop the garlic and mix with the orange peel. Sprinkle it over the meat.

4. Wrap the baking paper around the meat and bake in the middle of the oven for about 3.5 hours.

5. Then open the baking paper and brush the lamb with 2 tablespoons of honey. Roast the meat for a further 30 minutes in the oven.

 

Honey dressing

1. Mix honey and red wine vinegar in a bowl.

2. Coarsely chop the hazelnuts and finely chop the parsley.

3. Mix all the ingredients together and then spread the dressing over the lamb.
